Pear tarte tatin with brown sugar mascarpone
With a buttery base, rich fillings, caramelised fruits and lashings of syrup, this sweet tart is in a class of its own.
- Ingredients
- 2 tbs water
- 155g (3/4 cup) caster sugar
- 4 large pears, peeled, cored, quartered
- 1 tbs fresh lemon juice
- 1 tbs melted butter
- 1 tsp vanilla essence
- 1 sheet (25 x 25cm) frozen butter puff pastry, just thawed

- 250g mascarpone
- 2 tbs brown sugar
