With a buttery base, rich fillings, caramelised fruits and lashings of syrup, this sweet tart is in a class of its own.

  • Ingredients

  • 2 tbs water
  • 155g (3/4 cup) caster sugar
  • 4 large pears, peeled, cored, quartered
  • 1 tbs fresh lemon juice
  • 1 tbs melted butter
  • 1 tsp vanilla essence
  • 1 sheet (25 x 25cm) frozen butter puff pastry, just thawed

Brown sugar mascarpone

  • 250g mascarpone
  • 2 tbs brown sugar
